Why Scratch Cooking Matters

Category: Culinary

Author: Greg Zermeno, Culinary Director

In senior living, dining goes far beyond a meal. It supports comfort, wellness, routine, and daily enjoyment. At The Gardens at Arkanshire Senior Living, we prioritize from-scratch cooking and source fresh ingredients each week. Our culinary team prepares meals that are flavorful, nutritious, and thoughtfully tailored to resident needs. From house-made soups and sauces to freshly prepared entrées and sides, we focus on quality you can see and taste. As Culinary Director, I see how fresh sourcing and scratch cooking strengthen health, satisfaction, and daily comfort.

In my kitchen, from-scratch cooking means preparing food by hand. I take pride in exploring meals made with care and love. Cooking this way allows us to stay creative while honoring the dishes residents enjoy most.

Fresh ingredients directly support resident health. They help improve appetite, energy levels, and overall well-being. Meals prepared from scratch provide more nourishment and satisfaction than heavily processed options.

Listening and Adapting for Residents

I spend time with residents and ask what they enjoy. Their feedback guides our menu decisions. From there, I recreate those meals from scratch while staying true to their preferences.

We balance comfort foods with fresh, healthy choices. Residents often grew up with familiar, hearty dishes. I prepare those favorites with thoughtful adjustments to meet dietary needs while preserving flavor.

One resident favorite made entirely from scratch is chicken-fried chicken with mashed potatoes and country-style green beans.

To prepare the chicken, we marinate it for two hours in a house-made brine of hot water, soy sauce, salt, and sugar. After brining, we soak it in buttermilk blended with Greek seasoning. We then dredge it in seasoned flour with garlic and onion powder before frying. The result is flavorful, comforting, and deeply satisfying.

Why Scratch Cooking Matters

Scratch cooking requires time, skill, and attention to detail. That effort shows in every dish. Freshly prepared meals support wellness, enhance satisfaction, and create a dining experience that feels personal and familiar.

At The Gardens at Arkanshire Senior Living, our culinary team prepares meals with intention and pride. We use fresh ingredients and maintain a strong commitment to quality.
